A cool salad for the summer birthday parties, bbq, any gatherings or just for yourself. My family, friends and folks enjoyed this summer salad at my kids 2nd year birthday party. It was a hit.
FUNFACT – I’m pretty sure most of us think watermelon as a fruit, but turns out it’s a veggie all time long (oompa, loompa I wasn’t aware until now!)
HEALTH BENEFIT – Watermelon improves heart health, natural hydrant, anti-inflammatory properties, improves digestions, improves skin and hair and muscle soreness.

Notes
* If you do not have a watermelon scooper, you could also use your measuring spoons to scoop out – The circular shaped ones.
* Also, you could use the watermelon cups as cool helmet at a beach. A cool head 😉
Ingredients
- Watermelon – 1 medium sized
- Blueberries – 1 cup
- Mint leaves – 10 leaves
- Feta cheese – 1 cup
- Sweet lime – 1
- Salt – a pinch
Instructions
- 1. Cut the watermelon into 2 equal halves.
- 2. With a scooper, scoop out the watermelon into bite sized balls and place it into a big bowl.
- 3. Now you will have 2 empty watermelon cups. Keep it aside for later use.
- 4. In another big mixing bowl add in the blueberries, coarsely cut feta cheese, mint leaves, squeeze in a whole sweet lime, salt and give it a good toss. Salad is ready!
- 5. Now you can add in this salad in the watermelon cups, refrigerate it for a while and enjoy it cool.
